Pumpkin soup with caramelized pears (gluten free)
Delicious winter potage!
Ingredients (serves 6 to 8 persons):
- 1 pumpkin
- 2 celery branches
- 1 onion
- 2 pears
- 20g butter
- salt and pepper
- 2 table spoons sugar
Preparation of the recipe:
1- Peel and chop the onion, chop the celery, peel the pumpkin and cut in small dices.
2- Cook the onion with 10g butter for 2 to 3 minutes, add the celery for 3 minutes (until translucid) and add the pumpkin for 2 more minutes.
3- Add 1200 ml water, bring to boil and let simmer for 10 minutes.
4- Peel and cut the pears in 1 cm dices. Cook and stir in a pan with the rest of the butter for 3 minutes. Add the sugar and cook until the pears become lightly golden with caramel.
5- Blend the soup and add salt and pepper. Serve in individual bowl and add 1 tablespoon pears on top.
