Happy St Valentin's! Gluten free Fraisier

Enjoy this light and fruty cake with your Valentin! Gluten free.

Ingredients:

-    4 eggs
-    2 egg whites
-    80 g sugar
-    60 g potato starch
-    500 g fresh strawberries
-    250 g mascarpone 
-    20 g sugar (for the filling)
-    2 egg whites

Preparation of the recipe :

1-    For he sponge cake (génoise): Separate the whites and egg yolks.
Mix the yolks and sugar. Whip the egg whites until they become thick and add to the previous mixture. 
2-    Add the starch little by little and mix very gently with a spatule.
Pour the mixture on a baking sheet in a rectangular dish. Cook 8 to 10 minutes in preheated oven (170°C), until the sponge cake turns very lightly golden.
3-    Take the cake out of the dish as soon as it gets cool enough, place it on a plate. Cut the cake in 2 equal halves horizontally.
4-    Wash and dry the strawberries. Take out the stem. Mix the 2 egg whites to get a nice and firm mousse. Blend the mascarpone with 100 g strawberries and 20 g sugar. Then add the egg whites and mix delicately with a spatula.
5-    Cut 200 g strawberries in equal halves vertically and place them around the bottom half of the cake (placed inside the dish). Spread the mascarpone and strawberry mixture on the bottom half of the cake. Place the second half on top and place the rest of the strawberries on the cake.
6-    Place the cake in the fridge for at least 2 hours before serving.
